Whole Wheat Lasagna – A Simple Yet Delicious Recipe

I discovered this recipe on the back of a whole wheat lasagna box, but I’ve given it my own personal touch. While there are plenty of fancy and intricate lasagna recipes out there, this one keeps things simple and delicious. If you’re short on time but still craving a hearty homemade meal, this is the perfect dish. And who knows—maybe one day, I’ll try one of those highly rated gourmet versions!


Ingredients:

(Serves: 6-8)

For the Meat Sauce:

  • ¾ lb ground beef
  • 1 garlic clove, minced
  • 1 tbsp parsley flakes
  • 1 tbsp dried basil
  • 1½ tsp salt
  • 2 cups chopped tomatoes
  • 2 (6 oz) cans tomato paste

For the Pasta & Cheese Mixture:

  • 1 (8 oz) box whole wheat lasagna noodles
  • 2 (12 oz) cartons cottage cheese
  • 2 eggs, beaten
  • 1 tsp salt
  • ¼ tsp black pepper
  • 2 tbsp parsley flakes
  • ½ cup grated parmesan cheese
  • 1 lb mozzarella cheese, shredded

Directions:

  1. Prepare the Meat Sauce:
    • In a pan, cook the ground beef over low heat, stirring occasionally until browned.
    • Add the garlic, parsley, basil, salt, tomatoes, and tomato paste. Stir well.
    • Let the sauce simmer uncovered for about 30 minutes, allowing the flavors to blend.
  2. Cook the Lasagna Noodles:
    • Boil the whole wheat lasagna noodles in a large pot of water for about 6 minutes or until slightly tender.
    • Drain and set aside.
  3. Prepare the Cheese Mixture:
    • In a bowl, combine cottage cheese, beaten eggs, salt, pepper, parsley, and parmesan cheese.
    • Mix well until smooth and evenly combined.
  4. Assemble the Lasagna:
    • Preheat the oven to 375°F (190°C).
    • In a 13x9x2-inch baking dish, spread half of the lasagna noodles at the bottom.
    • Layer with half of the cheese mixture, followed by half of the mozzarella cheese, and then half of the meat sauce.
    • Repeat the layers, finishing with a generous sprinkle of mozzarella on top.
  5. Bake to Perfection:
    • Place the dish in the preheated oven and bake for 30 minutes, until the cheese is melted and bubbly.
  6. Serve & Enjoy:
    • Let the lasagna sit for 5-10 minutes before slicing.
    • Serve warm and enjoy this wholesome, flavorful dish!
